Quick Snoek Balls
Ingredients:
 
1 kg smoked snoek, deboned and flaked 
250 g cottage cheese with chives 
1 small bunch parsley, washed and very finely chopped 

Method:
 
Process the snoek and cottage cheese in a food processor. Roll into small balls and roll the balls in the finely chopped parsley. Chill until ready to serve. Garnish with lemon wedges and sprigs of parsley. Makes about 20 balls.
