Crusty Yellowtail Fish with Mustard
Preparation time: 4 minutes 

Cooking time: 8 minutes 

Ingredients:

1 thick slice of bread, broken into pieces 
small handful fresh parsley leaves 
30 ml olive oil 
1 orange, grated rind 
salt and pepper to taste 
30 ml Dijon or seed mustard 
4 skinless fillets of cob, yellowtail or hake 

Method:

Blend the bread and parsley together in a food processor until fine. Add the oil, orange rind, salt and pepper to taste and process again briefly. Put the fillets on a baking tray. Spread mustard over each portion. Press an even layer of crumb mixture over each. Grill under a hot grill or bake in preheated 200 ºC oven for about 6 minutes, depending on thickness, until topping is crisp and fish white. Serve with a microwaved potato and green salad.
