| Curry and Coriander Yellowtail |

Ingredients: 2 kg fresh linefish fillets (yellowtail, steenbras, kabeljou, cod, Cape salmon or snoek) 1 lemon, grated peel 5 ml chopped lemon grass 2 cloves garlic, crushed 5 ml ground coriander 10 ml good-quality curry powder 2 ml salt 60 ml olive oil Method: Place fish fillets in a shallow ovenproof dish or on a foil tray. Blend lemon peel, lemon grass, garlic, coriander, curry powder and salt. Mix with olive oil and brush lavishly over fish fillets. Bake, uncovered, at 180 ºC for 10 to 15 minutes, then place directly under the grill and cook until crusted and golden brown, 5 to 10 minutes extra. Recipe From : FAIRLADY
