Braaied Snoek
Ingredients:
 
1 fresh snoek, butterflied 
3 large lemons, juice 
250 g butter 
freshly ground black pepper 
salt 

Method:
 
Wash the snoek and leave to dry in a windy area. Salt to taste. Heat the rest of the ingredients until the butter has melted. Place the snoek fairly high above medium-hot coals. Turn frequently, basting well with the lemon-butter mixture. Braai for 20 minutes at the most, depending on the thickness of the snoek. Cut into portions and serve with pot bread and grape jam.
