| White Rice and Snoek |

Ingredients: 60 g margarine or oil 1 onion, thinly sliced 15 ml mild curry powder 250 g smoked snoek, skinned and flaked 500 ml cooked jasmine rice 410 g whole tomatoes, finely chopped salt and freshly ground black pepper to taste 2 hard-boiled eggs, finely chopped 1 lemon, sliced Method: Heat the margarine or oil in a large pan and sauté the onion until soft. Add the curry powder and stir-fry for a minute. Add the snoek and cooked rice, stirring with a fork until well blended. Add the finely chopped tomato and simmer slowly for a few minutes until heated through. Season to taste with salt and freshly ground black pepper. Turn the mixture into a pretty serving dish and sprinkle with the finely chopped hard-boiled eggs. Garnish with lemon slices and serve with chutney. Serves 6. Recipe From : YOU September 24, 1992
