Mich’s Dishes – Recipe for Butter Prawn Curry

Michelle from Robberg prepared her delicious Butter Prawn Curry for us recently. All the ingredients and the method are shown below, or you can follow along while you watch the video. Enjoy!

INGREDIENTS

For the prawn marinade :

  • 1kg prawn meat OR boneless chicken breasts cut into bite-sized pieces
  • ½ cup plain yogurt
  • 1 ½ TBS minced garlic
  • 1 TBS minced ginger
  • 2 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp red chili powder
  • 1 tsp of salt

For the sauce :

  • 2 TBS olive oil
  • 2 TBS butter
  • 1 large onion sliced
  • 1 ½ TBS minced garlic
  • 1 TBS minced ginger
  • 1 ½ tsp ground cumin
  • 1 ½ tsp garam masala
  • 1 tsp ground coriander
  • 400g crushed tomatoes
  • 1 tsp red chili powder
  • 1 ¼ tsp salt
  • 250ml cream
  • 1 TBS sugar

INSTRUCTIONS

  1. In a bowl, combine the prawns (or chicken) with all the ingredients for the marinade, and let it marinate for 30 minutes to an hour (or overnight).
  2. Heat oil in a large skillet or pot over med-high heat. Add prawns (or chicken) in batches to seal the prawns or chicken. You will finish cooking the meat in the sauce.
  3. Heat oil/butter in the same pan. Fry onions until they start to sweat, while scraping up any browned bits stuck on the bottom of the pan.
  4. Add garlic and ginger and sauté for 1 minute until fragrant, then add coriander, cumin, chili powder, garam masala, chili powder and salt. Let cook for about 20 seconds until fragrant, while stirring occasionally.
  5. Add crushed tomatoes and sugar, and let simmer for 10-15 minutes, stirring occasionally until the sauce thickens.
  6. Remove from heat, and blend the mixture until smooth.
  7. Stir in the cream, add the prawns or chicken with the juices and cook for an additional 8-10 minutes until prawns or chicken is cooked through and the sauce is thick and bubbling.
  8. Garnish with chopped cilantro and serve with basmati rice.
